Monday: Sheet-pan salmon with sweet potatoes & Brussels sprouts

Heat the oven to 425°F. Toss 2 diced sweet potatoes and 1 lb halved Brussels sprouts with 2 tablespoons olive oil, salt, pepper and ½ teaspoon smoked paprika; roast 15 minutes. Push to the sides, add four 5-oz salmon fillets brushed with a mix of 1 tablespoon each Dijon mustard and maple syrup, and roast 10–12 minutes more. Finish with lemon.

Tuesday: Crockpot turkey & bean chili

Brown 1 lb lean ground turkey with 1 diced onion (or skip browning on busy days). Add to a slow cooker with 1 can each black beans and kidney beans (rinsed), 1 can (28 oz) crushed tomatoes, 1 diced bell pepper, 2 tablespoons chili powder, 1 teaspoon cumin and 1 cup low-sodium broth. Cook on LOW 6–8 hours. Top with Greek yogurt, avocado and cilantro. Leftovers: freeze 2 portions for next week.

Wednesday: Roasted veggie & chickpea quinoa bowls

Roast cubed butternut squash, red onion and 1 can chickpeas (patted dry) with olive oil, cumin and salt at 425°F for 25 minutes. Serve over cooked quinoa with a handful of kale, then drizzle with a quick sauce of 2 tablespoons tahini, lemon juice and water. Add a soft-boiled egg or feta for more protein.

Thursday: Sheet-pan chicken sausage with apples & butternut squash

Slice 1 package (12 oz) precooked chicken-apple sausage and toss on a sheet pan with 2 sliced apples, 3 cups cubed butternut squash and 1 sliced red onion, plus olive oil, thyme, salt and pepper. Roast at 425°F for 25 minutes. Serve with a simple green salad. Buy pre-cut squash to make this a 10-minute prep.

Friday: Turkey taco lettuce wraps

Cook 1 lb lean ground turkey with taco seasoning (or chili powder, cumin, garlic powder and paprika) and ½ cup salsa. Spoon into butter lettuce or romaine leaves and top with pico de gallo, avocado, shredded cheese and a squeeze of lime. Kids can build their own — use tortillas for anyone who wants them.

Saturday: Slow cooker chicken & white bean soup

Add 1½ lb boneless chicken breasts, 2 cans cannellini beans (rinsed), 3 diced carrots, 3 celery stalks, 1 diced onion, 3 garlic cloves, 1 teaspoon Italian seasoning and 6 cups low-sodium chicken broth to a slow cooker. Cook on LOW 6 hours, shred the chicken and stir in 2 handfuls of spinach. Perfect for a chilly game-day Saturday.

Sunday: Herb pork tenderloin with roasted carrots & green beans

Rub a 1½ lb pork tenderloin with olive oil, garlic, rosemary, salt and pepper. Sear 2 minutes per side, then move to a sheet pan with carrots and green beans and roast at 425°F for 15–20 minutes until the pork reaches 145°F inside. Rest 5 minutes before slicing. Leftover pork makes great lunch bowls on Monday.
